The weather continues to be chilly in the Midwest as darkness starts to fall around 4 in the afternoon. Seasonal Affective Disorder is kicking in. I've never known anything, barring major catastrophes, that a hot bowl of soup couldn't cure, even in summer! Maybe that's just me, but soup = comfort in my book.

This Quick and Easy Mushroom Barley Bacon Soup Recipe combines three ingredients Eastern Europeans love. The best part is it comes together so quickly -- 15 minutes to prepare, 15 minutes to cook. Even less time if you use presliced mushrooms. It's the instant barley and the Canadian bacon that make a difference. Conventional recipes use tough cuts of beef that take at least an hour to cook.
