The Virtual Holiday Cookie Exchange concludes with these offerings:

Thumbprint Cookies - Carroll Pelligrinelli, About.com's Guide to Desserts and Baking, offers her childhood favorite recipe. She says your imagination is the only limit to the different flavor options available with this tasty recipe.

Cinnamon Palmiers - Rebecca Franklin, About.com's Guide to French Food, shares this recipe. "When one thinks of palmiers (tiny, scroll-like pastries), sweet, flaky cookies come to mind. These cookies are just that, with a touch of comforting, caramelized cinnamon."

Chocolate Oat Cookies - Syrie Wongkaew, About.com's Guide to Australian & New Zealand Food, says, "These delicious cookies are simple and fun to make. You can decorate them with smarties, colored sprinkles or nuts."

Mexican Wedding Cakes - Chelsie Kenyon, About.com's Guide to Mexican Food, says these delicate shortbread-style cookies, made with chopped, roasted pecans and rolled in confectioners' sugar, make an elegant addition to any fiesta.

Iced Cranberry-Orange Cookies - Diana Rattray, About.com's Guide to Southern Food, says these cookies, filled with orange juice concentrate and filled with plump dried cranberries, will be a hit with your family and your holiday guests.

Here's a Cookie Recipe Roundup.

The picture of the oat cookie with the chocolate drop looks just like some we make.
We use either butter or smartbalance to make cookies (depending on the recipe). I make traditional chocolate cookies minus the eggs, plus oatmeal. They are fantastic!
