The small bites trend continues as a popular way to entertain. It's really a terrific idea -- people get to try many different things and not feel stuffed. Consider transforming the lowly quickbread into show-stopping gourmet desserts.
Using a serrated knife, slice loaves of different-flavored quickbreads into 1/2-inch slices. Make sure the quickbreads are cold because they will be easier to cut without crumbling. Then, using a 2-inch biscuit cutter, cut rounds of cake. Use any scraps in bread pudding or toast them and use them as a base for tarts or cheesecakes.
Now is the time to get creative. Poppy Seed Quickbread rounds, for example, can be dolloped with lemon or lime curd, another poppyseed round, a dollop of whipped cream and a sprinkling of ground cloves.
With Date-Nut Quickbread, you can sandwich two rounds together with flavored or regular cream cheese. The possibilities are endless. Pick a quickbread, or several, and get going. They look so pretty arranged on a mirror or fancy tray.
