Mashed potatoes, sweet potatoes, stuffing or dressing, and green bean casserole all seem to be the requisite sides for many Thanksgiving dinners. But why not shake things up this year?
This Polish Potato Casserole recipe combines pumpkin and cheese with the potatoes. This can be prepared ahead and reheated in the microwave on T-Day if the oven is too full.
If you choose to make this another day, serve it with bread and a tomato salad for a vegetarian meal. For a heartier dish, add leftover chopped cooked meat or skinned and sliced cooked sausage.
