Hanukkah, the Festival of Lights, begins at sundown on Dec. 8 in 2012 and will last for eight days, until Dec. 16 at sundown. Here are three recipes from Joan Nathan's "Quiches, Kugels, and Couscous: My Search for Jewish Cooking in France" (Alfred A. Knopf, 2011) that fit perfectly for the celebration. You'll have plenty of time to try them over the eight-day holiday.
