Celebrate Hanukkah With Zero-Fat Latkes!

Among Ashkenazi Jews (those of Eastern European descent), potato latkes or pancakes are a favorite for Hanukkah, the Jewish holiday that celebrates the miracle of the oil central to the story of the menorah's lighting.

I know of no other food cooked in oil that I love as well as potato pancakes. In Poland, they're called placki kartoflane and eaten by Jews and Christians alike. But, in addition to a carbohydrate load that could knock over a convenience store, the fat and calories in these crispy, thin pancakes can make you feel guilty quicker than a Jewish mama.

Take heart, bubbala. This zero-fat version of latkes, made with egg whites instead of whole eggs, and baked instead of fried, whittles down their per-pancake stats from 80 calories and 3 grams of fat to 65 calories and 0 grams of fat! Add some applesauce but leave off the sour cream (or opt for low-fat or fat-free) and you've got it made!
