I know of no other food cooked in oil that I love as well as potato pancakes. In Poland, they're called placki kartoflane and eaten by Jews and Christians alike. But, in addition to a carbohydrate load that could knock over a convenience store, the fat and calories in these crispy, thin pancakes can make you feel guilty quicker than a Jewish mama.
