When I'm really fussing and doing a lot of decorating on a cookie, I want one that stays light in color and doesn't warp or distort when baking. Enter this Holiday Shortbread Cookies Recipe.

It uses no leaveners so what you see when you cut it out is pretty much what you get after it's baked. It's perfect for a poured or rolled fondant finish with edible wafer paper, as I've done on these cookies, and glittery coarse sugar edges. Here are some of my Easter-inspired cookies using the same technique.

I've made a big batch of wafer-paper-decorated Christmas cookies this year and wrapped them in plastic bags and tied them with pretty bows to give as token gifts to everyone who visits my home during the holidays. I love this time of year!
