If your family is like mine, Christmas entertaining goes on for weeks and weeks after the 25th of December. I'm always looking for something different to bring to the next round of parties.
Coconut, pineapple and other tropical fruits are commonplace in Eastern Europe these days. So, it's seems natural that they would find their way into a popular Polish dessert -- cheesecake or sernik. Polish cheesecakes are typically made with a shortbread crust as I have done in this Polish Coconut Cheesecake or sernik kokosowy. If you really want to get tropical, you can put well-drained pineapple slices or tidbits under the coconut crumbs that grace the top of this rich cheesecake.
