Red Beet Marmalade

Eastern Europeans love their beets, but red beet marmalade
? Oh, don't wrinkle up your nose at the thought of beets on toast. Red beet marmalade would actually be quite tasty schmeared on a bagel, but I like it even better as an appetizer on a toasted round of baguette with a shaving of cheese. The sweet-tart flavors imparted by the balsamic vinegar are hard to improve on and make a nice pairing with a good red wine. If your family is like mine, you're still ringing in the New Year with holiday parties. Try this hors d'oeuvre at your next gala. You'll be a star!
