Eastern Europeans love their beets, but red beet marmalade? Oh, don't wrinkle up your nose at the thought of beets on toast. Red beet marmalade would actually be quite tasty schmeared on a bagel, but I like it even better as an appetizer on a toasted round of baguette with a shaving of cheese. The sweet-tart flavors imparted by the balsamic vinegar are hard to improve on and make a nice pairing with a good red wine. If your family is like mine, you're still ringing in the New Year with holiday parties. Try this hors d'oeuvre at your next gala. You'll be a star!
