Well, not all the fat is gone, but a substantial portion of the calorie load from fried Polish doughnuts or pączki is removed when these pastries are baked. The other benefit is that you can use the toothpick test to tell if they're done rather than waiting until a fried one is cooled and cut into.
So fear not! Now you can feast with impunity (or at least in guilt-free moderation) on Fat Tuesday in America or Fat Thursday (Tłusty Czwartek) in Poland where herring are eaten on Fat Tuesday!
Oh, the baked pączki are those dusted in confectioners' sugar in the picture.
