If your bakery doesn't sell pączki, or you just feel like making your own but think time will be an issue, try this Easy No-Yeast Pączki Recipe, known as Angielskie Pączki or English Doughnuts. The batter is dropped from a spoon into hot oil. They're more like fritters or racuchy. Heck, they're like beignets! Now how Mardi Gras-ish is that?
Did you know that up until the 16th century, pączki were made with bread dough and filled with cracklings and lard (smalec) and bacon (bekon)? Thank heavens they made the transition to the pastry side. Although, the former might have its merits, if you've ever had smalec!
In Poland, today is known as sledziówka (Herring Day) or ostatki when massive quantities of herring and vodka are consumed! However you celebrate, happy Fat Tuesday!
