Macaroons Are Great for Gluten-Free Diets and Passover

Even though awareness of this disability is being raised, people with celiac disease or others on a gluten-free diet certainly get the short end of the stick when it comes to most desserts made with flours or grains. Well, not anymore. Not when you think macaroons -- almond or coconut. (Don't confuse these with French macarons, which are all the rage right now.)

This recipe for Gluten-Free Almond Macaroons is made with 100% almond paste, sugar and egg white. That's it! How easy is that? This is definitely a cookie dough the kids can make. The macaroons can be topped with half a maraschino cherry or candied orange peel before baking, or a drizzle of chocolate when they've come out of the oven and cooled. Here's a gluten-free Polish Almond Cookie recipe that is made with ground almonds instead of almond paste that you might enjoy also.

These cookies do double duty as a dessert for Passover because no chametz (grain products) is used in their preparation. Just remember to use pure sweetened almond paste. Check the label!
