Definition: Pickling salt, or canning salt, contains no iodine and anticaking additives (like table salt does) because they would turn the pickled food dark and the pickling liquid cloudy. While you can use pickling salt in place of table salt, the reverse is not true. Kosher salt may be substituted for pickling salt. Generally, 1 cup + 2 tablespoons kosher salt = 1 cup pickling salt.
