What would Christmas be without an exchange of traditions and recipes? I love to hear about other families' customs, and I'm betting you do, too. About.com's Guides for British & Irish Food, Eastern European Food, French Food, German Food and Spanish Food would like to present you with this collection of traditional Christmas recipes.

Here are two fabulous and iconic recipes from Elaine Lemm, About.com's Guide to British & Irish Food. They make Charles Dickens' "A Christmas Carol" come to life!

Christmas Cake - No British Christmas is complete without a Christmas Cake. This Christmas cake recipe may at first look complicated but is actually quite easy, all it needs for success is organization. Assemble and weigh all the ingredients and line the cake tin before you start and the rest is straightforward. The cake can be made up to two months before Christmas allowing time for it to mature and to be fed at regular intervals with brandy.

British Christmas Pudding - Despite reports that the traditional British Christmas Pudding has fallen out of favor for lighter desserts, it is as popular as it ever was. The pudding is best made well in advance, by several weeks to allow it to mature. Traditionally the Christmas Pudding is made on "Stir It Up Sunday," the Sunday before Advent around the end of November.

Polish Christmas Traditions - Christmas is a magical time in a Polish family. You know the season is in full gear when St. Nicholas Day, Dec. 6, rolls around and good children receive nuts and fruits from Swieto Mikolaj and naughty boys and girls receive a lump of coal. The highlight, even more so than Christmas Day, is the lovely Star Supper or wigilia on Christmas Eve.

Gingerbread Tell-All - Did you know Middle-Age bakers in Torun, Poland, created a special gingerbread bakers guild? Enjoy this gingerbread tell-all with a gallery of pictures, patterns, recipes and the history of this sweet treat.

Beef Burgundy Recipe - Rebecca says, "This warming stew, full of herbs and vegetables, is our family's traditional Christmas Eve dinner. Simply put it on to slow cook, do your holiday preparations and, in a few hours, sit down to a delicious, hearty meal."

Pain d'Epices Recipe - Warm spices and an unexpected shot of rich hazelnut flavor give a comforting twist to this classic French gingerbread recipe. It's wonderful accompanied with a steaming mug of coffee or hot chocolate.

Jennifer McGavin, the Guide to German Food has this to say.

German tradition calls for two days off, the 25th and 26th, which are used for visiting friends and family and taking long walks in the woods. The traditional dinner on Christmas Day:
German Christmas baking is done in November so you have goodies for the Advent tray.
