• 1/4 cup lemon juice

• Wash, Core and Quarter the Quinces
• Cook the Quinces in a Heavy-Bottomed Saucepan
• Cook Until the Quince Has Broken Down
• Puree the Cooked Quinces to a Smooth Consistency
• Add Sugar to Quince Puree and Cook Down
• Cook the Sweetened Quince Puree Until Very Thick
• Pour Hot Quince into Prepared Pan
• Cool and Cut the Quince Paste Into Squares
• Dredge the Quince Squares in Sugar and Package
