Spit-Roasted Pig: A Tradition

Spit-roasting suckling pigs is a tradition among some Eastern Europeans, notably Serbians, Croatians, Slovaks, Yugoslavians, Lithuanians and others. It's considered the only way to barbecue and is the preferred way of feasting for major holidays and celebrations. It's a dying art, so get your spit-roasted meats while you can. Many have gone the way of the convection oven but not Stephen Kovel Shultz. The owner of Piggin Out Catering in Northwest Indiana has been at it for 40 years and is passing on the tradition to his young sons. To see how lamb is roasted, view this image gallery.
