In 1948, brothers-in-law Sid Kotlick and Len Toll opened Calumet Fisheries along the 95th Street bridge on Chicago's far Southeast Side in a neighborhood known as South Deering. The smokehouse actually dates to the 1920s when Lake Michigan fish smokeries were a dime a dozen. Now, Calumet Fisheries is one of the lone holdouts in Illinois run by Mark Kotlick.
