Bulgarian drob sarma is a hearty main-course offering of lamb or calf's liver, rice, mint, onion, black pepper and chopped tongue. Originally, it was baked in a whole tripe. Nowadays it's spread in an oblong dish and topped with an egg-yogurt custard and baked until golden.
