Bulgarian Eggplant-Pepper Spread Recipe (Kiopoolu)

Bulgarian eggplant-pepper spread (kiopoolu) is similar to Croatian / Serbian ajvar, pictured here, except kiopoolu is made with green peppers instead of red and tomatoes are added. The resultant color is greenish-brown.

Definition: Kiopoolu is the Bulgarian word for roasted eggplant-pepper spread. It is served as an appetizer on bread or as an accompaniment to grilled meats. It is similar to Croatian / Serbian ajvar except Bulgarians use green peppers and add tomatoes.
Pronunciation: kee-AH-pooh-looh
Examples: Kiopoolu is similar to ajvar, but the difference is in the color. Kiopoolu is greenish-brown and ajvar is red.
