Polish Strawberry Mousse

Polish Strawberry Mousse (Mrozonka z Truskawek)

This light and refreshing Polish-style strawberry mousse -- mrozonka z truskawek -- is fluffy despite the use of gelatin in the recipe. Although red wine is called for, white wine or plain water can be substituted. The recipe easily can be doubled.

Makes enough for a 4-cup mold

Prep Time: 15 minutes

Ingredients:

  • 1 envelope unflavored gelatin (or 4 leaves sheet gelatin)
  • 1/4 cup cold water
  • 1 pint fresh strawberries, washed and hulled
  • 1/3 cup sugar
  • 1/3 cup wine
  • 1/4 cup boiling water
  • 1 cup heavy cream, whipped

Preparation:

  1. Soften gelatin in cold water. Meanwhile, place berries and sugar in the bowl of a food processor. Blend, add wine and blend again.

  2. Add boiling water to softened gelatin, dissolving completely. Add to berries in food processor bowl and whiz until thoroughly combined. Transfer to a bowl and chill until thickened.

  3. Whip cream and fold into strawberry mixture. Transfer to a 1-quart mold and chill 6 hours or until firm. Unmold on a pretty plate and serve.
