Oven-Baked Chicken

This Polish-American chicken recipe is referred to as Polish Wedding Chicken because it was often prepared this way for nuptials, festivals and church suppers. The meat is moist and it falls off the bones -- most satisfying! Once it comes out of the oven, it holds well in a steam table pan, making it perfect for brunch.

Makes a variable amount of Polish Wedding Chicken

Prep Time: 15 minutes

Cook Time: 1 hour, 35 minutes

Total Time: 1 hour, 50 minutes


  • Cut-up Chicken Fryer Parts, washed and patted dry (3/4 pound uncooked chicken per serving)
  • Paprika
  • Salt and pepper
  • Canola oil
  • 1 large onion per 4 servings, sliced thinly


  1. Heat oven to 450 degrees. Season chicken with salt, pepper and paprika. Rub all over with oil. Place in an uncovered roasting pan and bake 15 minutes, turning once.

  2. Reduce heat to 350 degrees, scatter sliced onions over chicken, cover and bake 60-80 minutes, basting frequently with stock and/or drippings, until golden brown and an instant-read thermometer registers 180 degrees. If chicken isn't browning, remove cover. Serve with pan drippings and caramelized onions.

The meat falls off the bones, literally, and the flavor somehow brings back memories. Great stuff with Caulifower Polonaise and potatoes (boiled, mashed, your choice...) !!!
