Makes a variable amount of Polish Wedding Chicken

Cook Time: 1 hour, 35 minutes
Total Time: 1 hour, 50 minutes
- Cut-up Chicken Fryer Parts, washed and patted dry (3/4 pound uncooked chicken per serving)
- Salt and pepper
- Canola oil
- 1 large onion per 4 servings, sliced thinly
- Heat oven to 450 degrees. Season chicken with salt, pepper and paprika. Rub all over with oil. Place in an uncovered roasting pan and bake 15 minutes, turning once.
- Reduce heat to 350 degrees, scatter sliced onions over chicken, cover and bake 60-80 minutes, basting frequently with stock and/or drippings, until golden brown and an instant-read thermometer registers 180 degrees. If chicken isn't browning, remove cover. Serve with pan drippings and caramelized onions.
