  • Don't discard the water in which you've boiled sausages, like Polish kielbasa. It makes an excellent base for soups and sauces.

  • Once the sausage has finished cooking, remove it from the boiling pot. Pour the water into a heatproof container and let it come to room temperature. Refrigerate until the fat has risen to the top and congealed. Simply skim it off and use the flavorful liquid as the base for a soup like white borscht.
