    This recipe doesn't actually contain pierogi, but it is pierogi-esque in its ingredients and flavors because it is made with potatoes, cheese and caramelized onions, which are common pierogi fillings. Here is what you will need to make this casserole:

    • 1 (8-ounce) package oven-ready lasagna noodles (12 noodles)
    • 4 medium potatoes, peeled and cut into large chunks
    • 2 cups small-curd cottage cheese
    • 1 large egg, beaten
    • 1/2 teaspoon onion salt, divided
    • 1 cup shredded Cheddar or white Cheddar cheese
    • 1/4 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 cup caramelized onions
    • 1/2 cup dry breadcrumbs
    • Sour cream, for garnish
    • Chopped dill, for garnish

    Prepare the Cottage Cheese Mixture for Pierogi Casserole

    Soak 1 (8-ounce) package lasagna noodles in warm water for 30 minutes. Meanwhile, in a medium sauecepan, boil 4 medium peeled chunks of potatoes in salted water until tender.

    While potatoes are cooking, mix together 2 cups small-curd cottage cheese or farmer's cheese, 1 large beaten egg and 1/4 teaspoon onion salt, and set aside.

    Combine Mashed Potatoes and Cheese for Pierogi Casserole

    When potatoes are tender, mash them and stir in 1 cup Cheddar cheese or white Cheddar cheese, 1/4 teaspoon regular salt, remaining 1/4 teaspoon onion salt and 1/2 teaspoon pepper.

    Spread Cottage Cheese Mixture Over Noodles for Pierogi Casserole

    Heat oven to 350 F. In a 13 x 9-inch pan that has been lightly coated with nonstick spray, place 3 drained noodles horizontally. Spread cottage cheese mixture over first layer of noodles. Lay down another 3 noodles.

    Spread mashed potato mixture evenly over second layer of noodles. Cover with another layer of 3 noodles.

    Add Caramelized Onions to Pierogi Casserole

    Spread 1/2 cup caramelized onions evenly over third noodle layer. Cover with remaining 3 noodles. Mix remaining 1/2 cup caramelized onions with 1/2 cup dry breadcrumbs and spread over the last noodle layer.

    Bake Pierogi Casserole Until Bubbly

    Cover the filled casserole dish with foil and place on pan to catch any drips. Bake 30 minutes or until bubbly. Uncover and bake 5 minutes more. Let stand 10 minutes before cutting into squares as for lasagna.
