Roast Loin of Pork with Stuffing Step By Step

Make a horizontal cut in pork roast.

Prepare the roast for stuffing.

Heat oven to 425 degrees. Make stuffing by sauteing onion in butter until soft. Mix together breadcrumbs, apples, raisins, zest, cloves and sauteed onion. Adjust seasonings with salt and pepper. Set aside.

Place pork roast, fat side down, on a cutting board. Make a horizontal cut in the center of the meat to within 1 inch of the edges and rear wall to create a pocket.
