Add Ingredients for Mushroom Barley Soup to the Pot

Let the soup simmer for about 1 hour or until the barley is tender.

Place chopped mushrooms, barley and stock in a 5- to 6-quart soup pot. Pour reserved soaking liquid into pot, taking care not to disturb grit in bottom of the bowl.

Rinse and drain barley and add to pot. Cover and bring to a boil. Reduce heat and simmer, covered, for 1 hour or until barley is tender, about 1 hour.
