- When peeled potatoes turn dark, it means they have oxidized or been exposed to air. The quality isn't compromised, just the appearance, so they're still OK to eat.
- To keep peeled whole or cut potatoes white, keep them covered in water until ready to use. This even works overnight, refrigerated.
- When grating potatoes for recipes like potato pancakes, potato pie, and potato kugelis, among others, mix in a little ascorbic acid, which is nothing more than vitamin C powder. A pinch of crushed vitamin C tablet in a little water will work just as well. Just don't get carried away. You don't want to mess with someone's vitamin C intake!
