Like many other Eastern European church groups in the United States, the Serbian Sisters' Kolo, which means "circle," of St. Sava Serbian Orthodox Church in Merrillville, Ind., still hand stretches strudel dough to make sweet and salty (savory) cheese, apple and cherry strudels three times a year -- Easter, Christmas and for Serb Fest in the summer. They make thousands, plus nutrolls and palachinkes.
These devoted women, most in their 70s and 80s, have been making strudels at the church for 40 years or more. It's a dying art but one the ladies are anxious to pass on to the next generation.
Hand stretching strudel dough is a skill that takes years to develop, but it's not impossible! Learn how the St. Sava Kolo does it in these step-by-step photos. You can order a St. Sava Serbian Sisters' Circle Cookbook under Goods and Services on the right.
